This makes a great meal for dinner and when having guest over!
Prep time: 15 minutes
Cook time: 50 minutes
What you need:
- 1kg of ground beef
- 1 medium sweet onion diced
- 1 cup white rice
- 1 1/2 cups of bbq sauce
- 3 peppers ( yellow & orange)
- 6 portobello mushroom caps
- 4 cups shredded herb & garlic cheddar
- salt & pepper
Step 1: Place your ground beef in a large skillet on medium-high heat. Diced the sweet onion and saute with butter in a separate small frying pan on high. Once the onions are cooked add to the ground beef mixture and heat until the beef if cooked through. Season with salt & pepper for taste.
Step 2: Cook one cup of rice separately.Once the rice is cooked about 25 minutes add to the onion and ground beef mixture.
Step 3: Once the ground beef is cooked through add 1 1/2 cups of bbq sauce and let simmer on very low heat-about 2, and cover with a lid.
Step 4: Now is time to take your peppers and mushrooms and wash them. Once this is done cut the tops of the three peppers of choice. I chose to use yellow and orange but you can use any ones you prefer. Clean out the peppers and remove the stems from your mushrooms.
Step 5: Fill your three peppers with the mixture that has been simmering on the stove. Place a generous amount of shredded herb & garlic cheddar on each pepper; then place a mushroom cap op the top to cover the filling. You will have three leftover mushroom caps. Fill these with the same mixture and top with the same shredded cheese.
Step 6: Preheat your oven to 325 F . Place the peppers and mushroom on a Bake & Broil Pan and bake for approximately 25 minutes or until the peppers are soft.
Step 7: Let cool for 2 minutes and serve.
